Wine sorbet

A curious and easy recipe that can intrigue and delight your guests’ palate

Take a pot and put 300 ml of water and sugar and melt it on low heat for about 3 minutes. Remove from heat and cool the syrup. Add the wine and some lemon juice and stir well. Then strain the mixture through a sieve and put it in another bowl. Put the freezer for 3 hours, stirring every 30 minutes.

Whip the egg whites with the icing sugar and then put the mixture into a saucepan, in a container for cooking in a water bath. Fill the pot below with boiling water in, until the water reaches the pot edge. Cook for 5 minutes beating with a whisk until the sorbet becomes creamy and hard.

Remove the bowl over the pan and keep stirring until the mixture cools down. Pour the sorbet into a bowl and then add the egg white, mix well and then put the sorbet into 4 dessert bowls or cocktail glasses.
